Friday, because nurse three cannot work 3 consecutive days and the only days available for her would be Monday, Wednesday, and Friday.   The only days the "3 consecutive days" rule could apply to are Monday, Tuesday, and Wednesday.  With that, we can eliminate Monday and Wednesday from the list of eligible days leaving us with Friday.

Possible answer could be Monday, WednesDay or Friday as show below.
X is marked as holiday for that nurse. Y is working on that day and blank is not working.

Assumption here is that they may be days when any nurse is working alone and it's based on the fact that nurse one and three are off on Thursday and Sunday so nurse 2 have to work alone there is no choice for her.
