org_id is belongs to operating unit level.It will be available on modules like PO, AP, AR,...... organization_id belongs to inventory level.It will be available on modules like INVENTORY,BOM,WIP

Organization id is mainly related to Inventory Organization and Org_id is belongs to Operating Unit. whenever we are doing any transaction based on different inventory organization in the business that time organization id comes into picture but, if we are doing any transaction on multi org i.e nothing but a multiple operating unit in that case Org_id would become the identity through which we can mapped different operating unit data.
