In real time as per business logic we need to build the mapping using number of transformations, for example if you are trying to pass millions of rows with number of transformations and writing sql overwrite etc.. I mean to say lot of manipulations depending on business logic.  I hope this helps.,

Complex mappings means not a map with more than 100 transformations used in.
Even 5 transformations used mapping also called complex enough.
It depends on business logic. If the requirement has too much business restrictions and constraints used to implement with informatica then it is complex.
Another thing, if the map looks complex to you, and it may not be complex to others.

If any one asked in interview like, means the complexity that you were faced while developing mapping thats it. It may not be complex to the interviewer.
