u can choose fields like maintaining data base and retriving data from that data base depending upon  users request like application with a backend for ur mini project. for Example u can create an application which maintain ur college's Library data base or a DVD rental shop's data base

First of all minin projects are done to increase your knowledge, and go depth in the subject. So, select yhe field of your interest rather than select easier field, as it increases your enthusiasm and motivates you.
Go to google and search for mini projects on the topic of your wish, you will get the explanation, block diagram and flow chart.

If you are interested in computer science and Statistics, i will suggest you to go for Hadoop projects, but it requires to have good knowledge of some programming language (say Java) and Unix is must. I will suggest you to try to understand the concepts why will you prefer Hadoop at first, what is Hadoop and what actually it does better to solve the problem. for other future scope, hope Google will help you.:)
