I wonder if it is possible to have a multiple choice list to check different versions on a defect. E.g. one defect may be fixed in several version in several countries, and we would like to be able to have a list and check several of these versions and countries. Now it seems like it is only possible to have a list with just one choice.

You can select the "Allow Multiple Values" checkbox in the Customize project Entities under Customization, for that particular field.
