Cooling of water

Why the water collected below mud pot is cooler than that is in the pot?

Because when the mud get wet it will absorb moisture from atmosphere which makes water inside cooler

In mud pot water get cool because upper surface of water has higher kinetic energy which is continuously come out from the pot hence water get cooled.

We all know that mud pot got pours and from that pours water in the mud pot comes out and then that water tries to evaporate. To evaporate it needs some energy. That energy is taken for water inside the pot and evaporates. As water inside the pot looses energy they get cooled...

the heat transfer is very quick in mud pot when we compared to other material ...that's the reason y water get cooled
